– 1–2 pork tenderloins – Salt, pepper, and olive oil for seasoning – 1 ripe mango (peeled, diced) – ½ fresh pineapple (diced) – ¼ small red onion (finely chopped) – 1 tbsp fresh lime juice – 1 tbsp chopped cilantro (optional)

Ingredients
Season pork tenderloins with olive oil, salt, and pepper. Let rest at room temperature for 15 minutes.
Preheat grill to medium heat. Grill pork for 15–20 minutes, turning occasionally until internal temp reaches 145°F.
Remove pork from heat and let it rest, tented with foil, for 5–10 minutes.
Meanwhile, mix mango, pineapple, red onion, lime juice, and cilantro in a bowl.
Stir the salsa gently to combine and chill for 5 minutes.
Slice pork into medallions and arrange on a platter.
1. Spoon salsa over the top and serve with rice, quinoa, or greens.
