– 6–8 celery stalks (thinly sliced on a diagonal) – ½ cup Medjool dates (pitted and chopped) – ⅓ cup shaved Parmesan cheese – ¼ cup toasted almonds or walnuts (chopped) – Zest of 1 lemon – 2 tbsp fresh lemon juice – 3 tbsp olive oil – Salt and freshly ground black pepper to taste

Ingredients
Thinly slice the celery stalks on a diagonal and place them in a large mixing bowl.
Add chopped dates and lemon zest to the bowl with the celery.
Drizzle in lemon juice and olive oil, then toss well to coat evenly.
Season the mixture with salt and black pepper to taste.
Add chopped toasted nuts for crunch and stir gently.
Toss in the shaved Parmesan just before serving to keep the texture intact.
Serve immediately or chill for 10–15 minutes for a crisper, brighter flavor.
